Key differences
The GX 2500 has about 18% more logic capacity (1642K vs 1395K LUT4 equivalents).
They use different logic architectures: the GX 2500 is built from ALMs and the XCVU45P from LUT6, so the raw LUT counts (821K vs 872K) are not directly comparable.
For arithmetic, the XCVU45P has 5,952 DSP slices against 5,011 variable-precision DSP blocks on the GX 2500.
The XCVU45P has more on-chip memory (227.3 Mb vs 195 Mb).
Both have transceivers: 96 at up to 28.3 Gb/s on the GX 2500 and 64 at up to 32.75 Gb/s on the XCVU45P.
The GX 2500 is designed with Altera Quartus Prime and the XCVU45P with AMD Vivado.
