Key differences

The GX 2100 has about 41% more logic capacity (1359K vs 962K LUT4 equivalents).

They use different logic architectures: the GX 2100 is built from ALMs and the XCVU5P from LUT6, so the raw LUT counts (680K vs 601K) are not directly comparable.

For arithmetic, the GX 2100 has 3,744 variable-precision DSP blocks against 3,474 DSP slices on the XCVU5P.

The XCVU5P has more on-chip memory (168.2 Mb vs 127 Mb).

Both have transceivers: 96 at up to 28.3 Gb/s on the GX 2100 and 80 at up to 32.75 Gb/s on the XCVU5P.

The GX 2100 is designed with Altera Quartus Prime and the XCVU5P with AMD Vivado.
