Key differences

The GX 2100 has about 8% more logic capacity (1359K vs 1261K LUT4 equivalents).

They use different logic architectures: the GX 2100 is built from ALMs and the XCVU7P from LUT6, so the raw LUT counts (680K vs 788K) are not directly comparable.

For arithmetic, the XCVU7P has 4,560 DSP slices against 3,744 variable-precision DSP blocks on the GX 2100.

The XCVU7P has more on-chip memory (230.6 Mb vs 127 Mb).

Both have transceivers: 96 at up to 28.3 Gb/s on the GX 2100 and 80 at up to 32.75 Gb/s on the XCVU7P.

The GX 2100 is designed with Altera Quartus Prime and the XCVU7P with AMD Vivado.
